What is barley porridge (Talbina)

Talbina is a pudding-like porridge made from barley or barley flour. It is prepared by combining milk, dates, and honey.

(For diabetic patients, avoid adding dates. If Medjool dates are available, use them as they have lower sugar and carb content. Ensure the honey used is pure, as most store-bought honey is merely sugar syrup. If pure honey is unavailable, prepare Talbina without it.)

Preparation Method 

Talbina can be made using either barley flour or porridge. In my experience, when barley porridge is ground, a small portion turns into flour—do not separate this from the porridge. If you live in a big city, buy pure barley porridge from large stores. Avoid imported or packaged products. Herbalists recommend sourcing rain-fed barley from agricultural areas and grinding it yourself for maximum benefits.

Barley takes longer to cook than wheat. Take 100 grams of barley porridge (or one cooking spoon), soak it in warm water for an hour to soften it, then cook it over low heat with 2–3 cups of water.

Soak 7 dates in warm water, remove their seeds, and chop them. Add the chopped dates to the barley porridge when it is halfway cooked.

Once the porridge is semi-cooked, add milk. Stir constantly while cooking to prevent sticking. Cook the porridge until the grains fully dissolve into the milk, creating a smooth, pudding-like consistency. Avoid over-thickening. Once done, add two tablespoons of honey and one tablespoon of olive oil, and cook briefly before removing it from heat.

2 tablespoons olive oil

1 teaspoon vanilla extract

½ cup low-fat milk

2 teaspoons Stevia sugar

1 egg (optional)

Instructions:

1. Combine all the dry ingredients in a bowl.

2. Gradually add warm milk and mix until you get a smooth cake batter.

3. Add olive oil, vanilla extract, and the egg (if using). Mix well.

4. Pour the batter into a greased baking pan.

3. 2 tablespoons dry milk powder

6. 1 tablespoon white cumin seeds

7. Stevia, to taste

8. 2–3 drops lemon essence or vanilla extract

9. 2 tablespoons unsalted butter

10. 1/2 teaspoon baking powder

Instructions:

1. Preheat your oven to 180°C (350°F).

2. In a bowl, combine all dry ingredients: oat flour, dry milk powder, sesame seeds, salt, white cumin seeds, and baking powder.

3. Add peanut butter, unsalted butter, and your choice of essence (lemon or vanilla) to the dry mixture.

4. Mix in Stevia according to your sweetness preference.

5. Gradually add lukewarm milk to the mixture, stirring until a soft dough forms.

6. Shape the dough into biscuits of your desired size and place them on a baking tray lined with parchment paper.
